This is fun to make with older children too.
Provides: Iron, Vitamin B1, B2, B3, Prebiotics
6 tbsp. soft butter
5 tbsp soft light brown sugar (or Moscovado Sugar)
2 tsp.golden Syrup (honey is a good alternative for 2yrs and up if they are not allergic to it)
1 tsp vanilla extract
4 tbsp plain flour
1/4 tsp baking soda
Pinch of salt (not for babies under 1 year)
5 tbsp Rolled oats
4 tbsp Raisins, cut in half
Preheat the oven to 180ºC (if using a FAN oven 160ºC only)
Cream the butter, sugar and golden syrup together until light in color and fluffy, then bat in the vanilla extract. Fold in the flour, baking soda, salt and oats, followed by the raisins. Spoon into 18 small balls and arrange in baking trays lined with parchment paper. Note: the dough will flatten so make sure to arrange the dough 2 inches apart from each other. Bake for 10 to 12 minutes, rotating the baking trays half way through if you are not using a FAN oven. Leave to cool on the trays for a few minutes before transferring to a wire rack. The biscuits will crisp up as they cool.
Makes 18 to 20 biscuits.
